Better yet, this easy, cheesy potato soup recipe is made from scratch and uses only pantry staple ingredients. That makes it a great choice for days when you are just too busy to plan ahead for dinner.
How to Make Cheesy Potato Soup
Ingredients:
- 1 Medium Onion
- 4 tbsp Butter
- 2 tbsp Flour
- 2 c Whole Milk
- 2 tsp Salt
- 1 quart Chicken Stock
- 4 c Diced Potatoes
- Pinch Black Pepper
- 1 c Cheddar Cheese
Optional:
- Cooked Bacon
- Red Pepper Flakes
Instructions:
Dice and Saute Onion
Peel away outer skin of the onion and cut off the tip of both ends. Slice onion in half. Using a cutting board and sharp knife, cut the onion vertically into slices. Next cut into slices across horizontally. Melt butter in a heavy bottomed pot or Dutch oven. When the butter has melted, add onions and stir until onions are translucent.
How to Make a Roux
The roux is what makes this simple, cheesy potato soup creamy. To make it all you need to do is add the flour to the onion and butter in the pan, The heat should be on medium low. Once the flour is mixed in, it should look like a paste. Next start to add the milk. Just a little a a time. Your goal is to thin the paste and then it will let it start to look thick and creamy. Stir to prevent roux from burning and sticking to the pan.
Pour in Broth
Stir broth into milk mixture. Turn heat up to medium.
Add Potatoes
When the soup is hot and almost to the point of boiling, add in salt and diced potatoes. Cook for 20 minutes or until potatoes are fork tender.
Cheesy Potato Soup Finish
Now you are ready for the cheese. Stir in cheese until melted. According to your taste, add pepper and more salt if needed.
Extra Special Finish
Finish with a topping of crumbled bacon, red pepper flakes, or a sprinkle of extra cheese on top.
