I can picture us sitting around my grandmother’s kitchen table. There was a steaming pot of tea set on the table and each of us had a China cup. Tea was absolutely never served without something sweet. These coconut cookies were my favorite treat that she made. Very few of my grandmother’s recipes were written down.
These coconut cookies are a perfect treat to go along with a cup of tea or coffee. You should already have everything you need, expect for maybe, the shredded coconut. It should be easy to pick up at any grocery store. Just make sure it’s shredded and not angle flaked coconut. Add a cherry half on top to gives it the perfect touch. You could also go with chocolate chips or raisins.
Coconut Cookies Ingredients
- 1 Cup Sugar
- 3 Tablespoons Butter
- 4 Eggs
- 1 Teaspoon Vanilla Extract
- 4 Cups Flour
- 1 Teaspoon Salt
- 1 Teaspoon Baking Powder
- 1- 14oz package Shredded Coconut
Optional Topping
- Maraschino Cherries, Raisins, Chocolate Chips, etc
- Powdered Sugar
Method:
Preheat oven 350 degrees
Cream sugar and butter together. Mix in eggs and vanilla
In a separate bowl sift together flour, salt and baking powder.
Add dry ingredients to sugar mixture. Dough will be stiff.
Fold in coconut. You may have to use your hands.
Chill dough for 30 minutes.
Scoop with a teaspoon and roll into a ball before placing on a lined cookie sheet. Use your thumb to make an indentation to place the cherry half.
Bake for 12 mins.
Enjoy these coconut cookies with a hot cup of tea.
