Scrumptious Cinnamon Apple Streusel Muffins

As we welcome in fall, I find myself wanting to spend more time in the kitchen. The need to reach for a cozy sweater as the sun dips down brings about a renewed desire to create hearty meals that invite the family to linger around the table. Since we are in peak apple season at the moment, now is the perfect time to my cinnamon apple streusel muffins.

Apple confections are not reserved for dessert alone. There are many wonderful breakfast options. Imagine a magical fall morning that doesn’t include an alarm. Coffee is freshly brewed and a batch of Cinnamon Apple Streusel muffins are waiting for you on the cake stand.

My hope is that you are able to carve out a few moments like this to rest and recharge. Below, I am sharing my Cinnamon Apple Streusel Muffin recipe so you can enjoy them when you do.

Cinnamon Apple Streusel Muffins

Streusel:

1/4c Flour

1/4c Sugar

1/4c Brown Sugar

1/2tsp Cinnamon

3tbsp Cold Unsalted Butter

Muffin:

2c Flour

1tsp Baking Powder

1tsp Baking Soda

1/2tsp Salt

1tsp Cinnamon

1/2c Unsalted Butter softened

2/3c Sugar

2 Large Eggs at room temperature

1 tsp Vanilla Extract

1c Buttermilk at room temperature

1 1/2c peeled and diced apples (Baking variety such as Granny Smith)

Method:

Preheat oven to 425 degrees. Grease enough muffin tins for just over 12 muffins.

Make the Streusel topping first by mixing dry ingredients together and then adding in the cold butter. Set aside.

For the Muffins, sift the flour, baking powder, baking soda, salt and cinnamon together. In a separate bowl cream the butter and sugar, then add eggs and vanilla. Next alternatively mix in flour and buttermilk. Lastly fold in apples. Spoon batter into muffin tins and top with Streusel mix.

Bake at 425 degrees for 5 minutes then turn temperature down to 350 and bake for 15 more minutes.

Additional Options

  1. Make a glaze for Drizzling over muffins once cooled. Whisk I cup powdered sugar and 2 tbsp of whole milk. Using a small spoon, drizzle the glaze over the muffins.

2. Double the streusel recipe and fold half in muffin batter when folding in apples.
