Growing up my family was very involved in our church. It very much felt like an extension of our family. It was a wonderful part of my childhood and I have many cherished memories. We moved when I was fifteen, more than thirty years ago, and I can still picture the people that left an impression on my heart.
Something I especially looked forward to was potluck lunches. It was wonderful to have extra time with friends and socialize. The ladies would get there extra early to make sure the tables and chairs and been set up correctly by the deacons. The special church punch was prepared, cookies, cakes and pies were spread out on the dessert table. a few ladies stayed in the kitchen during the service to make sure all the food was warm and set out in time. The aroma coming from the kitchen wafted through the church halls. When the sermon was over everyone headed to the fellowship hall where a feast was waiting.
A lot of love went into the meals that were prepared. Most women made extra so that there was plenty for guests and whoever was not able to contribute. Special dishes became infamous and were usually the first to go. I remember more than once hearing someone grumble over missing out on a favorite dish. There were quite a few special dishes including Mrs. Noel’s Corn Casserole.
It had become a regular in our home at barbeques but over the years it was replaced with other dishes. Recently as my mother was going through her recipe box, she came across the recipe and shared it with me. All these years later it is as delicious as I remembered. This recipe comes together very quickly and makes an easy side dish. I hope you enjoy it as much as my family has.
Mrs. Noel’s Corn Casserole
Cornbread Mix
2/3 cup Flour
1/2 cup Yellow Cornmeal
1/4 cup Sugar
1 tbsp Baking Powder
1/4 tsp Salt
2 tbsp Melted Butter
Remaining Ingredients
1 15 oz Can of Corn
1 14.75 oz Can of Creamed Corn
1 8oz Sour Cream
1/2 cup Melted Butter
2 eggs
Mix together cornbread ingredients first, then mix in the remaining ingredients.
In a greased 8×8 inch dish, bake at 350 degrees for 45-50 minutes.
Some optional ideas: Add 1 cup shredded Cheddar Cheese on top before baking, or chopped jalapenos for some heat and cut sugar down to 2 tbsp.
